Quality Control

Quality control in our production plays a particularly important role. After all, it’s not enough to think up with a recipe, it is important to observe the whole technology, preserve it so that the final product always delights with unchanging taste and quality. Today, we will talk a little about quality control at the Bacchus factory together with Dinara Faizova, the head of our production laboratory, who has been working at Bacchus JSC for 25 years.

Previously, in order to produce wine, the harvested grapes were pressed directly with feet. Usually, small girls were involved. This was done in order to prevent damage to the pip of the berry — because of this, the wine could be bitter.

Fortunately, those days are long gone. Today, we use only high-tech equipment in production. For example, we use a special Italian press that presses grape juice in a special membrane way so that the pips in the grapes remain intact, and you can enjoy an impeccable taste.

After making the wort, we begin the verification of the wine material. Then, samples are taken from the upper, middle and lower layers. All three samples are mixed, and the so-called «average sample» is obtained. It is exactly that goes to the laboratory for physico-chemical analysis. At the same time, a special commission analyzes the organoleptic characteristics: taste, color and aroma.

The next step is the «rest” of wine material after discomforting transportation for adapting to conditions and temperature. The future wine is very capricious and takes at least 15 days to rest, after which the raw materials go through an additional verification stage. Then the technologists decide where the wine material will be sent. For this, a technological map is compiled.

At the end of the processing of wine material, the time has come for trial blends in the laboratory.

Although we produce products according to GOST, we try not to be limited to its parameters, but we study the chemical composition of wine material and cognac distillates. For this, we use the only capillary electrophoresis in Kazakhstan.

We always check the purity of the wine material, and if it is cognac distillate, then we check the cationic composition. Therefore, we can safely talk about the naturalness of our product, without any doubt.

All this scrupulous work with wine from berries to store shelves is aimed at ensuring that you can always get a consistently high-quality product.
